Garlic Mashed Cauliflower (paleo, gluten free)
This is a great alternative to mashed potatoes. If you haven’t tried it yet I encourage you to! As someone who has never been a huge fan of cauliflower I can attest to its yumminess! You can make it a creamy or chunky as you like, and as buttery or garlicky. I recommend using purple cauliflower for something fun and festive! Enjoy!
1 head organic cauliflower, trimmed into florets and stems
8 cloves organic garlic, peeled
2 Tbsp grassfed butter, ghee, or organic olive oil (opt)
S&P, to taste
Steam cauliflower and garlic until tender. If you like a chunkier mash you want the cauliflower to be a little firm, softer for a creamier mash. Throw cauliflower and garlic into food processor and process until desired smoothness. Scoop into a bowl and mix with butter/oil and seasonings. Voila!
