Paleo Beef Kielbasa with Peppers and Onions
* I used beef kielbasa because that’s what I got from the farmers
market this week. You could also use brats or another sausage. This
recipe serves 2. Feel free to double!
– 1/2 lb kielbasa
– 1 large onion
– 1 large bell pepper (I used orange)
Preheat oven to 350 degrees. Pour about an inch of water in skillet
and heat to a simmer. Add kielbasa and cook for 20 minutes. While
that’s cooking, chop up onion and pepper. After 20 minutes, empty all
but about a cup of water from pan. Add onion and pepper to kielbasa.
Place pan (or transfer to oven safe dish) in oven for 20 minutes.
Should be cooked through and a little crisp on outside. Yum.
